Well, no discussion of a meal would be complete without dessert. I don’t know if they always eat this well, or perhaps because both Zahra & her sister Nizzra (sp??) are on vacation from school this week, but it’s been amazing. One night we had a tart (sponge cake) with what seemed like custard and pineapple on top. Another night we had a recipe Zahra got from some American friends; lemon meringue pie. But instead of lemon, it was made with orange, it was fabulous! Last night we had a very tart lemon tart! Wow. Good thing my room is up two good flights of stairs, and the classroom is up three! Another main meal I forgot to mention last time is the tagine. Tagine is the name of the cooking pot/cooking style. It’s a ceramic pot of sorts, with a flat base with roughly a 2” lip, the ceramic cover is a tall cone. I guess the tall cone allows the steam to circulate. This tagine dish started as simmering tomatoes, lots of spices, onions…. after some hours, it was a smooth sauce and kefta (kofte??) [small meat balls] were added along with some egg. Definitely a dip-into-the-dish meal, very flavorful! Tomorrow is Friday, which is the holy day of the week. Practicing Muslims go to the mosque midday, probably the hamman (baths) and have couscous for the midday meal. I guess it’s a special event when all the family gets together around the table to share the meal. If it’s anything like the meals so far, it should be delicious, interesting and full of good cheer & conversation!
